Ingredients

- 1 cup quinoa
- 2 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 cup broccoli, chopped
- 1 cup shredded cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and chicken broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
- In a large bowl, mix cooked quinoa, shredded chicken, broccoli, cheese, garlic powder, onion powder, salt, and pepper.
- Transfer the mixture to a greased baking dish.
- Bake for 25-30 minutes or until heated through and cheese is bubbly.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add other vegetables.
- Store leftovers in the refrigerator for up to 3 days.
- This dish can be frozen for future meals.
