Ingredients

  • 1 cup quinoa
  • 2 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup broccoli, chopped
  • 1 cup shredded cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Rinse the quinoa under cold water.
  3. In a pot, combine quinoa and chicken broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. In a large bowl, mix cooked quinoa, shredded chicken, broccoli, cheese, garlic powder, onion powder, salt, and pepper.
  5. Transfer the mixture to a greased baking dish.
  6. Bake for 25-30 minutes or until heated through and cheese is bubbly.
  7. Let it cool for a few minutes before serving.
