Ingredients

  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 package (16 oz) gnocchi
  • 2 cups spinach
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened.
  3. Stir in garlic, thyme, and basil. Cook for 1 minute.
  4. Pour in chicken broth and bring to a simmer.
  5. Add cooked chicken and gnocchi. Cook until gnocchi is tender.
  6. Stir in spinach and heavy cream. Cook until heated through.
  7. Season with salt and pepper to taste.
