A hearty and comforting chicken gnocchi soup.
Ingredients

- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 package (16 oz) gnocchi
- 2 cups spinach
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Stir in garlic, thyme, and basil. Cook for 1 minute.
- Pour in chicken broth and bring to a simmer.
- Add cooked chicken and gnocchi. Cook until gnocchi is tender.
- Stir in spinach and heavy cream. Cook until heated through.
- Season with salt and pepper to taste.
Notes
- Use rotisserie chicken for convenience.
- Store leftovers in the fridge for up to 3 days.
- You can freeze the soup for up to 3 months.
