Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, celery, and bell pepper. Sauté until soft.
- Add potatoes and Cajun seasoning. Stir well.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Blend the soup for a creamy texture, if desired.
- Stir in heavy cream and season with salt and pepper.
