A healthy and flavorful bulgur bowl inspired by Mediterranean ingredients.
Ingredients

- 1 cup bulgur wheat
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, chopped
- 1/4 cup parsley, chopped
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Rinse bulgur wheat under cold water.
- In a pot, bring water to a boil.
- Add bulgur and a pinch of salt to boiling water.
- Cover and simmer for 12-15 minutes until tender.
- Remove from heat and let it sit for 5 minutes.
- Fluff bulgur with a fork.
- In a large bowl, combine bulgur, tomatoes, cucumber, onion, parsley, and feta.
- Drizzle with olive oil and lemon juice.
- Season with salt and pepper.
- Toss to mix well and serve warm or cold.
Notes
- Adjust vegetables based on preference.
- Can be stored in the refrigerator for up to 3 days.
