Description

A nutritious and hearty barley and mushroom bowl packed with flavor.


Ingredients

Scale
  • 1 cup pearl barley
  • 2 cups vegetable broth
  • 1 cup mushrooms, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse the barley under cold water.
  2. In a pot, combine barley and vegetable broth. Bring to a boil.
  3. Reduce heat and simmer for 30 minutes or until tender.
  4. In a skillet, heat olive oil over medium heat.
  5. Add onion and garlic, sauté until soft.
  6. Add mushrooms and cook until browned.
  7. Season with salt and pepper.
  8. Combine cooked barley with mushrooms and mix well.
  9. Serve hot, garnished with fresh parsley.
