Ingredients

  • 4 cod fillets
  • 2 cups cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, combine cherry tomatoes, garlic, olive oil, basil, oregano, salt, and pepper.
  3. Place cod fillets on top of the tomato mixture.
  4. Bake for 15-20 minutes or until the cod is cooked through and flakes easily.
  5. Garnish with fresh parsley before serving.
